Honey Muffins

Despite of a long list of ingredients, this a super easy recipe for  light, moist, nicely scented muffins. And because they are relatively low in sugar and calories, you can indulge your muffin cravings
guilt free.



1 large egg

100 g sugar

1 tablespoon of molasses

160 ml of vegetable oil

160 ml of honey

160 ml of sour cream

1/2 teaspoon of baking powder

1/2 teaspoon of baking soda

3/4 teaspoon of ginger bread spice mix

125-150 g of all-purpose flour

walnut halves for decoration

muffin tin & muffin cases


Preheat the oven to 180 C (350 F).

Line up the muffin tins with the muffin cases, set aside.

In a mixing blow, blend the eggs, sugar & molasses.

Stir in the oil, honey and sour cream.

Stir in the baking powder, baking soda and spice.

Add the flour and stir until the batter is smooth.

Spoon the batter into the prepared muffin cases filling each about 2/3 full.

Lay a walnut halves on top of each.

Bake for 20 minutes or until baked through.

Cool briefly in the pan before removing to a wire rack to continue cooling.
